This is genius!  Seriously, I'm not sure why I was so out of the loop on this one.  I love Mexican food, and I love it smothered in sour cream (yes I'm a bit of an addict), but as you all know sour cream = dairy = not paleo.  But cashews = nuts = paleo!  Holla!  So just stash this recipe away somewhere safe because I'm pretty sure it should be considered a paleo staple!  You can love me now.  Oh and because this is apparently in in the raw food world, and I was apparently not in the know, I'm not really sure who to give credit for this, but here's my take on the recipe.


  • 1 cup raw cashews
  • 1/4 cup cold water
  • 2 tsp apple cider vinegar
  • 1 tbsp lemon juice
  • 1/4 tsp salt


  1. Fill a bowl with water and soak the cashews over night
  2. Drain the water from the bowl and add the cashews to your food processor with all remaining ingredients
  3. Process until smooth and serve cold
